The Palais Méditerranée’s restored 1929 Art Deco façade hides a modern Hyatt above. Le 3e — restaurant and lounge bar — sits on the third floor with a panoramic terrace over the Baie des Anges. Chef Sébastien Roux runs the kitchen; the lounge bar earned two toques in the Gault & Millau guide. What you came for is the view; the room ranks second.

The second-row tables read better than the first — the parapet edge cuts into the view at lounger height.
