Moulin Alziari

Alziari presses Cailletier olives from the back-country groves the way Nice has always done — cold, slow, and the year’s harvest sold by Christmas. The shop on Rue Saint-François de Paule sells the oil in tin and glass, plus tapenade, pistou, and the soap their grandmother made.

The small tin travels better than the bottle. The dark green label is the table oil; gold is for finishing.
