Bar L'Amiral (Hôtel Martinez)

Rémi Tessier's 2010s redesign of the Martinez's pre-war bar — mahogany, low lighting, deep banquettes, the bartender team that still knows the festival regulars by glass. The bar runs late on Friday and Saturday; live piano three nights a week.

The Amiral signature — Cognac, Cointreau, sugar — is on the menu but not the screen.
