Dominique Le Stanc cooks what the market gave him. Stockfish, pissaladière, courgette flowers, all in a room small enough that two voices reach the kitchen. There is no reservation phone — you walk past at 11:30 to claim a slot, then come back at 19:30. Cash only. Menu written in marker on a paper square.
